  • In a very small pot, heat olive oil over medium-low heat, and add all 7 cloves of garlic. Cover pot, reduce heat to low. Stir occasionally. Olive oil and garlic is done cooking when garlic is very soft.
  • Meanwhile, cook chicken in a large pan over med-high heat, add chopped onion. Let cook until chicken is completely done and onion is tender. Set aside.
  • Cook rotini according to package instructions. Drain. Toss the chicken and onions, garlic and olive oil with the pasta; add cubed mozzarella, salt to taste.

Special Equipment Needed


You can start the garlic and olive oil a little early, the longer it cooks, the richer the flavor. However, be careful not to let the garlic brown, because it will become bitter in taste. You may or may not want to serve this with parmesan; it is tasty with or without it.
