You can prepare the potatoes ahead of time using an ice bath. Prepare a large bowl of water and ice. Dip the potatoes in water immediately after slicing to prevent discoloration. Allow them to dry on a plate, layering with paper towels. You can do this a few hours before you are ready to prepare this dish. This helps when you are trying to prepare a large meal for the holidays.
I like this dish because it has so few ingredients, yet tastes so delicious. Just make sure to add plenty of salt to the layers - sea salt, if you have it.
