  • Beat butter vigorously until it becomes very soft and forms peaks, and a bit whitish. Add icing sugar slowly and gradually until well mixed.
  • Add the rose and blossom water and mix well. Add flour also gradually and slowly to previous batter until you form a sort of a softball. Then you add the starch, and mix well again.
  • Then make small balls with your hands, put on a baking sheet, and bake in a moderate oven (350°F) 10-15 minutes or until dry. Do not overcook or it will become very hard.

Special Equipment Needed


You can add about half cup ground pistachio or walnut or any other nut you like, but you will have to add a bit of butter almost 1 tablespoon to the mix so it won't become dry. Enjoy.
