  • Throw a tablespoon of butter into a large skillet and melt on medium heat. Chop onion and sauté in butter for about 5 minutes.
  • Slice 5 large yellow squash into about 1/2 inch thick and immediately throw into skillet.
  • Cut bacon and chop up into small pieces and throw into skillet with squash and onion. Add a little salt and pepper!
  • Cover and keep on medium heat for about 15 minutes, stirring frequently. Enjoy!

This recipe is a summer staple in my household, yellow squash is frequently on sale at the grocery store during the summer and this dish is extremely quick and easy! Some people like to sauté bacon with butter and onion to get it a little crispy...bacon added in after squash will give a lot of flavor and will cook, but will not crisp. (Picky eaters LOVE this dish!)
