  • 1. Preheat oven to 350F.
  • 2. Beat cream cheese and sugar in large bowl with mixer until well blended.
  • 3. Add eggs, one at a time, on low speed, until well blended. Fold in zest if using.
  • 4. Place one cookie in the bottom of the paper lined muffin tin. Fill each with batter.
  • 5. Bake for approx. 20 minutes or until set. Cool on wire rack, then refrigerate for at least 3 hours. Drizzle with melted chocolate.

Notes

Double up the batch and throw them in the freezer. They keep well for about a month - if they last that long. Great to eat as a frozen treat as well.
