  • *Boil potatoes till tender; if you prefer peel and dice them or grate them (I leave the skin on for more nutrition.)
  • *While waiting for those potatoes to boil you get the rest of the prep done... mix sour cream, soup and cheese in a bowl. Saute the onion and half of the butter on med low in a small pan for about five min then add to your bowl and stir together.
  • * When potatoes are ready (we have them diced or grated in to our pan), add the mix from the bowl on top of the potatoes and make sure it is well covered and it doesn't spill over while spreading.
  • *Now the best, the topping the grandmother always did corn flakes so I stuck with it. Now melt that other half of the butter and pour over 3 cups crushed cornflakes and spread on the top.
  • * Bake at 350°F for about 20-30 min.
