  • Preheat oven to 425 degrees F. Sift together flour and baking soda. Cut olive oil into flour with a pastry blender or two knives until mixture resembles course crumbs. Stir in buttermilk with a fork until it pulls away from the sides.
  • Knead dough on floured board 10 times or until smooth. Roll or pat to 1/2 inch thickness and cut into 2 1/2-inch rounds with floured biscuit cutter. Place biscuits, touching in an ungreased 8 or 9-inch dark cake pan.
  • Bake for 12 to 15 min. or until golden brown.

Special Equipment Needed


You may brush the tops with melted butter if you wish. If dough is too sticky, add a small amount of flour but do not over mix.
