  • Preheat oven to 375°F. Wash potatoes & cut into 4ths or smaller. Place chicken & potatoes in 9 x 13 baking dish.
  • In separate bowl, mix together lemon juice, olive oil, oregano & garlic powder. Pour mixture over chicken & potatoes.
  • Cover with foil and bake for about an hour, possibly an hour & 15 min depending on your oven & depending on how soft you want your potatoes.

Special Equipment Needed


The great thing about this recipe is that it's easy to adjust for more or fewer servings. My husband & I love this meal & make it at least once every two weeks. I usually use a lot more potatoes than what I listed above, so that even after the chicken is gone, we have enough potatoes leftover that we can eat them as a side dish with other things. Also, I usually poke holes in the foil to give the chicken & potatoes some breathing seems to make everything turn out just a little better.
