The great thing about this recipe is that it's easy to adjust for more or fewer servings. My husband & I love this meal & make it at least once every two weeks.
I usually use a lot more potatoes than what I listed above, so that even after the chicken is gone, we have enough potatoes leftover that we can eat them as a side dish with other things.
Also, I usually poke holes in the foil to give the chicken & potatoes some breathing room...it seems to make everything turn out just a little better.
