  • Preheat oven to 350°F. Rinse chicken and pat dry. Sprinkle inside and out with salt and pepper. Place in 13x9 baking dish.
  • Squeeze the juice from lemon and dressing in a bowl and mix. Place lemon halves inside the cavity of chicken. Drizzle dressing mixture over chicken. Add meat thermometer into thickest part of one of the chicken thighs.
  • Bake 1-1/2 hours or until chicken is cooked through, internal temp of 180°F, basting occasionally.

    I've made this recipe at least a dozen times. My husband will ask for it. It's great for company. I tried using the Kraft brand Greek Style vinegarette dressing but ended up using (and preferring) a different brand of "low fat" Greek style vinegarette dressing. I found that it didn't make the chicken taste as greasy and it didn't burn as easily. I tried to baste every 20 minutes which seemed to work out well for me as I was working in the kitchen making a salad, etc.
