I like any kind of onion but the red lends a sweeter quality. These are great leftover as they remain moist and don't have the aftertaste that some cooked meat gets after being refrigerated.
When having as leftovers, I like to reheat in a skillet and not in the microwave, just a few minutes in a med hot skillet on both sides.
