  • In a greased 9x13 baking dish, lay a layer of chilies. Cover with a layer of cheese, 1/4 inch thick. Cover with another layer of chilies.
  • Separate eggs. Beat whites until stiff, beat yolks. Stir flour and salt into yolks. Fold yolk mixture into whites. Spread over chilies.
  • Bake at 375°F for 20-30 minutes or until lightly browned.

Special Equipment Needed


This recipe can be adapted to taste, more cheese or chilies. Also adjust amount made down to two servings by adjusting pan size and number of chilies used. This can be altered by using hot chilies to make it spicy. An excellent quick dinner for Mexican food lovers. Tip: If fresh chilies are used, grease your hands before peeling. After, just wash with hot soapy water and the chili oil will not get on your skin.
