  • Cut chicken breast in half (if you have thighs don't cut in half) Season with half of the salt and the pepper.
  • In blender, mix 1/2 cup of water with the cilantro. Drizzle in the olive oil, salt, and lime juice. Put in onion and jalapeno (optional).
  • Put chicken in bowl or shallow pan and pour over marinade. Let marinade for 30 minutes or more (the longer the better) but not overnight.
  • Cook on medium heat in shallow fry pan with a little olive oil or put on indoor or outdoor grill (better if grilled). Cook chicken until done.
  • Before chicken is done, cook your rice (according to package directions). Serve chicken over rice.
  • For presentation, serve a slice of a ripe tomato on the side with a few sprigs of cilantro. You may drizzle with a little more olive oil if desired.

Notes

My kids love their green chicken... haha!!!
