  • Sprinkle both sides of fish with garlic powder, and fish seasoning and press in with bottom of spoon. Cover with lime juice and spray on butter substitute.
  • Put fillets in fish basket being careful not to rub off seasonings. Set aside till you get charcoal ignited and turning gray. If you are not using charcoal with wood pressed in add your own soaked wood chips just before you put on fish.
  • Start cooking fish turning every 5 minutes to prevent losing moisture. Cook about 20 minutes or until fish gets charred look. You should also stick fork in thickest part of fish before removing from grill to make sure it is done. If you feel any resistance, continue to cook till done.

Special Equipment Needed


I use a traditional charcoal grill but a gas grill should work fine if you can add wood chips. Some grill catalogs offer metal boxes for wood chips so they don't burn up so quickly. Although regular butter may be used instead of the butter spray substitute I find that the spray seems to cling to fish much better and is also a way to avoid eating butter. If you want to use butter I would suggest you put it on just before serving to avoid having it drip in coals. I would also suggest spraying fish basket with cooking spray to help with cleanup. I use a large square hamburger basket since you can cook 3-4 fillets at one time. This allows you to turn fish without having it break up and fall into grill.
