  • Melt 1 Tbsp butter in small saute pan with a lid. On very low heat, break eggs into pan and cover.
  • Butter both pieces of bread with the rest of the butter. Heat another saute pan over medium heat. Place 1 piece of bread in pan butter side down. Place slices of Velveeta on the bread in the pan. When the bread is browned and the Velveeta is beginning to melt remove it to a plate.
  • Place the second piece of bread in the pan butter side down. While the second piece of bread is browning remove the lid from the eggs and check for doneness. If the yolks don't have a pale cooked look, flip them if you prefer.
  • Place the eggs on the first piece of bread and cheese on the plate. Add salt and pepper to taste. Place the second piece of browned bread on top of the eggs with the browned side up. Serve with a fork and your favorite morning beverage.

Special Equipment Needed


Optionally you can add bacon or ham or crumbled sausage between the cheese and the eggs. My favorite brunch!
