  • Pound the chicken between pieces of waxed paper to an even 1/4 thickness. Layer a slice of cheese and Prosciutto on each chicken breast; leave a 1/4-inch margin all around.
  • Fold the chicken over to completely enclose the filling, and then use your hands to form the chicken into a relatively even oval, smoothing the edges to seal. If necessary, the chicken can be secured with small skewers or soaked wooden toothpicks.
  • Put the bread crumbs on a plate. Brush the chicken with the olive oil, and then dredge in the breadcrumbs to coat completely. (The recipe can be prepared to this point up to 8 hours ahead and refrigerated).
  • Prepare a medium-hot fire. Grill the chicken, turning once with a spatula, until white in the center, but still juicy, about 13 to 15 minutes; total.
