  • Take the chicken and place in a food storage bag, and flatten to about 1/2 inch. Marinate the flattened chicken and the shrimp in garlic, 4 large basil leaves, lemon juice, lime juice, and salt & pepper overnight or 3-5 hours.
  • Grill the marianted chicken on both sides for approximately 20-25 minutes; and the shrimp for approximately 15-20 minutes. When done, let rest before slicing.
  • Meanwhile, chop the romaine lettuce, the spring mix lettuce, the red onion, and the cherry tomatoes. Assemble all the vegetables in a bowl; slice the chicken and shrimp and toss in also. Sprinkle with a dash of salt & pepper, and parmesan cheese. Toss everything together until well blended. Top it off by adding as much dressing as you would like, the thyme, 2 large fresh basil leaves, and you're ready to enjoy!


Feel free to substitute the dressing with any of your favorites. It works well with any dressing or no dressing!
