  • Pull husks of corn back, but do not remove them. Remove and discard silks, and soak whole ears of corn in a pot of cold water for 15 minutes.
  • Preheat a grill to 350 to 400°F. Remove corn from water. In a small bowl, combine olive oil, cilantro, salt, and pepper, and rub mixture on corn kernels. Re-wrap husks around corn and secure ends with a loose piece of husk or twine.
  • Place ears of corn on the grill, turning every 2 minutes. After a couple of turns, move ears to an indirect heat source or place on the top shelf of the grill and close the cover. Allow corn to roast slowly for 15 minutes. Corn is done when pressing a kernel causes it to burst very easily.
