  • Peel the very ripe pineapple (doesn't have to be perfectly clean or you'll take too much off). Mix the cinnamon and sugar and then roll the whole pineapple in the mixture.
  • When it is coated, you can place directly on a very hot grill. I prefer to place on a skewer so it sits high. You can then place chicken below the pineapple and the drippings will go onto the chicken.
  • The pineapple is done in about an hour. You want it quite hot to eat. Should not burn. When finished slice and eat. You could eat it with ice cream.

Special Equipment Needed


If you've had this before without the sweet mixture, you'll never eat it again without!! You can do this in the oven also, but much better on the grill! In Brazil, after an afternoon barbecue, we eat this to break down all the fat we just had off the grill and to help with digestion.
