  • Boil pasta till done, drain and set aside. Add a drizzle of oil so it doesn’t stick together, and toss to coat.
  • In a medium sauce pan melt margarine (skip if using bacon) and saute ham till a little crispy on the edges. Add cream and egg, whisking to combine well.
  • Turn the heat down to low and stir for a few minutes till it thickens, careful not to bubble or boil. Add peas or broccoli, stir. Add pepper and parsley to taste. Serve over pasta.

I’ve used ham lunch meat or leftover chopped ham, smoked sausage or bacon and peas, broccoli or green beans. This is a quick dinner my family likes; I serve it with a salad.
