  • Preheat oven to 350°F. Spray 2 (20-count) mini-muffin tins with nonstick cooking spray. Chop ham into very small pieces. Beat eggs and milk until mixed. Continuously beat eggs while adding in parmesan and ham.
  • Spoon mixture into mini-muffin tins, filling each cup 1-2 to 2-3 full.
  • Bake on 350 for 7-8 minutes, or until puffy and firm. Remove from oven and allow to cool slightly before removing from tins. Serve immediately or store in refrigerator to serve chilled.

Notes

Great for on-the-go breakfast, these Italian-style frittatas are delicious served hot or cold!
