  • Preheat oven 350 degrees F. Grease and flour 9x11 pan. Combine sugar, flour, and baking soda; mix together. Add pineapple with juice (don't drain) mix until moistened. Add coconut and walnuts. Mix well, batter will be stiff.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 45-50 minutes or until lightly golden of toothpick inserted comes out clean. Cool. Top with cool Whip.

Notes

This cake is very light and great alone or with a dollop of Cool Whip.

Rated 5 out of 5 by from We love this! We love this!!! made this for dinner yesterday and my husband and I loved it! However my husband and I detest beans of any kind, but love spice. So I substituted rice instead of the white beans, and a few jalapenos on top as well. Amazing!!
