  • Cook and measure out orzo into large bowl, set aside. Drain fruit. Cut cherries
  • In 2 qt. sauce pan, mix pineapple, oranges, sugar, and cornstarch. Cook on low to med. heat until mixture is thickened and bubbling, making sure to stir often. Add mixture to orzo. Add cut cherries and mix well.
  • Let chill 30 minutes. Fold in Cool Whip. Keep chilled till ready to serve.

Notes

Drain fruit and cut cherries while waiting for orzo to cook. You can find orzo in the pasta aisle of your grocery store. This makes a colorful dish to serve at holidays, picnics, or any occasion!

I also used fresh veggies instead of canned (red and greed peppers and mushrooms). My husband hates black beans, so I made his with rice instead. Both were super yummy. I will definitely make this again and again!

The chicken in the soup was a tiny bit bland so if you like spice and flavor maybe add some spices to the chicken while cooking. Will definitely make again.
