  • Crumble meat into a large bowl. Add the salt, sage, pepper and ginger. Mix well (I use my hand).
  • Shape into eight 2-inch patties.
  • In a nonstick skillet coated with nonstick cooking spray, cook patties over medium heat for 6-8 minutes on each side or until the juices run clear.

Notes

I sometimes add dried pepper flakes, about a 1/2 teaspoon, or a few splashes of Tabasco sauce because we like ours a little on the hot and spicy side. I have mixed both turkey and pork together to make this great tasting sausage. We never buy store bought sausage since I came across this recipe in one of my mother's old recipe books on how to make sausage.
