  • In a small skillet, heat the olive oil over medium heat. Add the frozen spinach. Cook for 1 minute to thaw. Add the onion and garlic.
  • Cover and cook for 4-5 minutes or until the onions begin to caramelize. Add the tomato and heat an additional 2 minutes. Set mixture aside, covered, until the egg mixture is ready.
  • Spray a separate non-stick frying pan with cooking spray, and heat it on medium until the pan is hot. Beat egg yolks and whites together in a bowl. Add them to the pan and scramble.
  • About the time the egg has almost solidified, add the spinach mixture to the eggs and saute until thoroughly cooked. Add the feta cheese and pepper during the last minute of cooking. Bon Appetite!
