  • In a large bowl, combine the first eight ingredients. In another bowl, beat the egg whites, egg, applesauce, orange juice, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the carrots, pecans, coconut, raisins and apple.
  • Coat muffin cups with nonstick cooking spray or use foil liners; fill three-fourths full.
  • Bake at 350 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.


You can get really creative with any of the fruit/nut combinations.

    These muffins were great! I made them in mini muffin pans and gave them a cream cheese frosting. My kids loved it and didn't even know they were eating something good for them.
