  • Pour oil into large saute pan. Add mushrooms, shallot, and garlic and saute until mushrooms are tender and shallot is translucent, about 4 minutes. Remove mushroom mixture from pan.
  • Season pork chops with salt and pepper on both sides. Sear chops on medium high heat, about 2 minutes on each side.
  • Return mushroom mixture to pan with chops. Add 1 can undiluted fat-free cream of mushroom soup. Simmer for about 5 minutes, covered. Serve with rice or potatoes.

    My kids rated this with a huge thumbs up! I brined my pork chops first, then followed the recipe. I didn't have a shallot, so I used some green onions. I will definently be making this again. :)
