  • In a pot of about 2 quarts of already boiling water, add fresh rinsed pinto beans (or red beans). Add tiny chopped pieces of bell pepper, onion, cayenne pepper, smoked turkey cut into pieces, simmered with cilantro, garlic, a bit of salt, & Ro*Tel. Cook for 2-3 hrs, till beans are tender.
  • While this is cooking in the last 1/2 hour, prepare the meat. Brown beef in a skillet, with lots of garlic, onions, a bit of salt, and a bit of fresh ground pepper. Then add the cooked beef to the pot of fresh cooked beans. Garlic is great for the heart, so do not limit yourself. Onions & hot spices are also great, as an antioxidant for your body (if your body can accept it). So, I tend to add a bit more (garlic, spices) to the pot. Add fresh chopped produce jalapenos as added flavor.
  • If you like thick chili, add flour to a small bowl of cold water to your thickness specifications. Really whip till all the flour is mixed into the liquid in bowl and then stir in. I prefer the homemade natural broth that the beans have.

Notes

I prefer cooking homemade beans. I keep spices in my pantry, & I do not purchase the chili-mix packets. I use Ro*Tel a lot! Also garlic, whether you prefer fresh (I do) or granulated (powder but thick, Sam's whse. has it). So, to great taste! is the ingredients you add.
