  • 1. In a mixing bowl combine ricotta, parmesan, and mozzarella cheeses; set aside.
  • 2. Cut out a heart from each won ton wrapper with a heart-shaped cutter (about 3 inches at the widest point). Put 1 heart on a lightly floured surface, mound 1 teaspoon of the cheese filling on each lobe of the heart, and brush the edges with water. Put a second heart over the first, pressing down around the filling to force out the air, and seal the edges well. Finish making the ravioli with the remaining wrappers, filling in the same manner. Transfer them to a kitchen towel as you form them, and let them dry slightly, turning them occasionally.
  • 3. Simmer pasta sauce in a small saucepan on medium-low heat.
  • 4. Meanwhile bring a large saucepan of boiling salted water to a gentle boil and in it cook the ravioli for 2 minutes, or until they rise to the surface and are tender. (Do not let the water boil vigorously once the ravioli have been added.) As the ravioli are cooked, transfer them to a clean kitchen towel to drain.
  • 5. Place ravioli onto 2 plates, and top with pasta sauce. Serve warm.

PERFECT FOR VALENTINE DINNER!! Tomato or Alfredo sauces are delicious on these. I usually make them with a simple salad, and heart breadsticks. You can also fry them and use the sauces as dipping sauce.
