  • 1. If using fresh or frozen chicken breast: place chicken breasts in a large pot and cover with water. Season to taste with salt and pepper. Add lid and let chicken boil until inside of chicken reaches a minimum of 160 degrees. If using canned chicken: skip to step #2.
  • 2. While chicken is cooking, dice vegetables. Coat a 10-inch skillet with cooking spray and saute onions, celery, and carrots over medium-low heat until tender.
  • 3. In a large pot, add broth. Stir in salt, pepper, and poultry seasoning. If needed, add more poultry seasoning as needed. Cut lime in half and squeeze juice into broth.
  • 4. Add vegetables and cooked chicken to broth; bring soup to a boil and cover; let boil until carrots are tender.
  • 5. Reduce heat to medium and add rotini pasta. Cover.
  • 6. Once pasta is al dente, add chopped tomatoes and stir. Serve immediately or leave on low heat for 5 minutes.


-The lime and poultry seasoning are what give this soup its flavor-- add more of both, if you choose! -The tomato adds color and also a nice flavor. -For an even tastier treat, sprinkle shredded cheddar cheese over each serving. -One small can of whole-kernel corn is also a good addition. -Garnish plate with a lime wedge and tortilla chips.
