Hearty Skillet Squash & Sausage Stew

  • Slice zucchini, onion and sausage. Place oil in deep skillet, add onion and zucchini. Saute 2-3 minutes. Add sausage, stewed tomatoes and basil.
  • Bring to boil, reduce heat; cover and simmer for approximately 20 minutes, or until squash is done.
  • Remove from heat, sprinkle cheese on top and cover. Let sit for 5 minutes, or until cheese is melted. Serve with bread.

Special Equipment Needed


This is a family favorite! You can make it Mexican by adding a dash of cumin and a sprinkle of chili seasoning, and you can leave the basil or delete it to subtlety change the flavor. To make it have a Greek flavor simply add a dash of nutmeg. You can also change the type of cheese to enhance your flavoring, or give it a new twist! With a slice of crusty bread, it is truly a complete and satisfying meal. This dish was created by my Mother, Margaret Hatcher!
