I found that when it was time to roll the cookies the second time in the powdered sugar you could do this in a resealable bag. I put a few in at a time and gently shook the bag then placed them on a tray to serve. Do not do this the first time you roll them while they are warm. They tend to be a bit fragile at this stage and can fall apart easily. So it is best to do the first roll in a bowl.
We served these cookies at my daughters wedding and they were a HUGE hit!
