  • Rinse ham seasoning meat and put in a large pot with 4 cups of water. This meat is very salty and will eliminate the need for much more salt. Cook the meat in water while you prepare the collards.
  • Fill your sink with cold water. Strip collard leaves from stems and put in sink to wash. Swish in cold water, remove collards, add clean water to sink and swish to wash collard again. Repeat this the third time.
  • Drain collard well and put in the pot with ham and boiling water. Add salt, pepper, nutmeg, red pepper flakes, and sugar. Reduce heat and partially cover pot with lid, cook until desired tenderness.
