  • Preheat oven to 350 F. Boil macaroni in a large pot with salted water for approx. 8 minutes or until almost done. Drain macaroni in strainer and set aside. In same pot melt 3 Tbsp. butter and whisk in flour. Be careful that there aren't any lumps. Slowly stir in milk (still watching for lumps), and then add salt and pepper to taste. Allow the rue to slightly thicken; it will stick to a wooden spoon. Add in Monterey Jack and Sharp Cheddar both grated. The more fresh and moist the cheese the better it will melt in. Fold in the cooked macaroni, if it has begun to stick don't worry it will separate.
  • Pour into an 8x11 casserole dish. Melt remaining 3 Tbsp. butter in a small pan and toss in bread crumbs to coat. Add layer of coated crumbs to top of the macaroni.
  • Bake in oven for 30 minutes. Let cool for 5 minutes and serve.
