  • Take a 8-9 inch round or square cake pan and line with aluminum foil, letting foil overlap over the sides. Butter foil generously. Set aside.
  • In a large heavy saucepan, melt I-Can't-Believe-It's-Not-Butter! on low heat. Once melted, add brown sugar, sweetened condensed milk and corn syrup; stir. Turn heat up to medium-high, stirring constantly, until mixture reaches a rolling boil, about 20 minutes.
  • Turn heat down to low and cook 20 minutes, stirring frequently. Remove from heat. Add vanilla and stir until well blended. Pour into pan. Let sit at room temperature for about 8 hours or overnight.
  • Using the foil overlap as a handle, take caramels out of pan and turn onto a cutting board. Peel off foil and cut the caramels into 1 inch pieces (or you can cut them into larger pieces, if you wish.), wrap in plastic wrap.

Special Equipment Needed


The best time to make this candy will be on a dry day when the humidity is low. In high humidity, the candy will not set properly.
