  • For the sauce: In medium saucepan over medium-high heat, combine tomato sauce, diced whole tomatoes, tomato paste, olive oil, spices,(leave out 1/4 tsp. basil leaves for ricotta filling) diced onion, sliced garlic, sliced mushrooms, diced green pepper, salt and pepper to taste. Bring to boil, cover and reduce heat to low and simmer until vegetables are tender and flavors all combine, about 30 minutes, stirring occasionally.
  • Meanwhile, in a large mixing bowl, combine ricotta, 1 cup mozzarella cheese, 1/2 cup parmesan cheese, 1/4 tsp. basil leaves, salt and dash of pepper, and chopped spinach. Mix well and set aside. Preheat oven to 350 degrees.
  • To assemble lasagna: In a 9 by 13-inch baking dish, start with a layer of sauce, follow with cooked noodles, sauce, ricotta filling, mozzarella, and parmesan. Continue with layers in this order until 1/2" remains around the rim. Top with mozzarella and sprinkle with parsley.
  • Bake for 20 minutes or until bubbling and cheese is melted through. Remove from oven and let sit for 5 minutes to cool slightly. Serve with your favorite lettuce salad and fresh garlic bread.

I know this dish takes a little time to prepare and assemble, but it has been a family favorite in my family for quite a while. Since it is my own recipe, I am the only person in the family who takes the time to fix it for family holidays and whenever it's requested.
