  • Add 2 cups of elbow macaroni to 4 cups of water. Add 1-2 tsp. of kosher salt to the water. Let them boil for about 12 minutes. When done, drain the macaroni. Run the macaroni under cold water right away. Put them into a big pot and into the fridge.
  • Next, dice onion and green pepper (the green peppers you use to make stuffed peppers). Drain the tuna fish. Get all your spices together in a bowl: freshly ground black pepper, parsley, oregano, Italian Seasoning, garlic salt, celery salt, paprika, and mayo.
  • You want your macaroni on the cool side. Add all items together and mix well.


The green bell pepper is optional, but I use it cause it gives it body, a kick, and coloring! How much of the mayo? Well you want the macaroni to be nice & moist. You don't have to use fresh parsley, or kosher salt. If you use fresh parsley, remember, only use so much, cause with fresh parsley, you don't need so much, as you do with the powder. Just chop it up very well if you have it. Also, if you don't have freshly ground black pepper, that's ok too. Now, this salad can make more than 6 servings so next time you want to make it again, just double up, even with the water. Instead of 2 cups of macaroni, make 4 cups of macaroni with 8 cups of water. And just double up with the other ingredients: Like 1 onion would now be 2. This is my recipe that I wanted too share with people. Plus I cook and bake in my home. -Ty Peggy
