  • Combine flour, sugar, soda, salt and cinnamon. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas.
  • Spoon batter into 3 round, 9-inch greased and floured cake pans. Bake at 350 degrees F. for 25-30 minutes or until wooden toothpick inserted in center comes out clean.
  • Cool in pans 10 minutes; remove from pans and cool completely. Spread frosting between layers, on top and sides of cake; then sprinkle 1/2 cup pecans on top.

Notes

    Really good and moist. This was the second time I've had it,so I had to rely on everyones response if it was good. I didn't make the first one. I loved that it has pineapple, bananas and pecans. The cream-cheese frosting was a good topper.
