  • Heat grill to medium high heat. While grill is preheating, cut pepperjack cheese block into small slices (should make about 8 small slices). Put thawed ground beef in medium size bowl. Add cornmeal, barbecue sauce, salt, pepper, Cajun, garlic, and red pepper flakes to the beef. Mix well, making sure everything is incorporated, either using a spoon or your hands
  • Pull out a small handful of the beef mixture shaping it into a meatball shape. Take two pieces of cheese and push them down into the middle of the beef, and then roll the patty again, pushing the meat over the top of the cheese that's still showing. Once the cheese is covered, push the burger into its patty shape. Repeat the shaping process for all 4 burgers.
  • Once grill is hot put burgers on for about 4 to 6 minutes a side (less if you prefer your burger rarer, longer if you prefer it well done). Add toppings you prefer such as lettuce, tomato, pickles, and condiments and enjoy!

Notes

- Don't like spicy? Take out the Cajun and red pepper flakes and substitute the pepperjack for another cheese such as cheddar. - To cut some fat and calories, use lean ground beef and reduced fat cheese (if it's available) - Serve with a side salad, beans, and chips for a perfect summer time barbeque!
