  • Have double boiler or glass dish set inside a smaller one to cook in. Separate eggs. Cut up chocolate for center. Cut up butter into smaller pieces. Melt chocolate then beat in egg yolks, butter and Irish Cream. Cook in double boiler till candy thermometer reached 169 deg.
  • Have dish ready to pour the candy into, by putting parchment in bottom. Take off heat put in paper lined dish or well greased glass 8in. square dish. Set in refrigerator till cool enough to make balls maybe 2 hrs. Then wash out double boiler to re-use for coating.
  • Then make the balls and let sit in fridge till you take them out one at a time to roll in melted chocolate that can either be dark or milk. Dip with fork and set on cool pan to set. I melted the chocolate in the double boiler again and just re-dipped in there. I used Baker’s Dark and Milk Chocolate for this recipe.

Special Equipment Needed


I used real butter. Don't try to hurry these as they take a bit of doing but are worth the effort...
