  • Cut broccoli into small pieces, peel carrots and cut into small stripes, cut salmon into 3/4 inch (2 cm) pieces. Sprinkle salt and pepper over salmon pieces.
  • Heat oil in a pot and pour in coconut milk. Let heat, not boil. Add carrots, broccoli, sugar and lemon juice. Let heat to a boil.
  • Place salmon pieces on top of mixture. Do not stir. Let the coconut milk cover the salmon. Let stand for 15 minutes.

Notes

Great to serve with fried pineapple rice or wild rice!
