  • Place the cubed chicken in a bowl. Pour one of the 8 ounce cups of dressing over the chicken to marinate the chicken for about 30 minutes (this can be done and placed in the refrigerator overnight).
  • While the chicken is marinating, boil the water with the salt and margarine (or the chicken broth) in preperation for cooking the rice. Once boiling, pour in the rice and cook until your desired tenderness.
  • After 30 minutes of marinating, heat a non-stick skillet and place the chicken in for cooking. Cook the marinated cubes until the chicken has browned on all sides (the oil will cook away and you will have great-smelling Italian marinated chicken cubes!!). This will take about 15-20 minutes.
  • Once the chicken and rice are cooked, take a plate and place a couple of tablespoons of rice onto the plate, off to one side. Then top with the chicken. Take a little of the saved Italian dressing and drizzle it over the chicken and rice. Place a serving of any leafy salad of your choice on the same plate with a slice of toasted French bread and enjoy!!!
