  • Prepare pie crust according to package directions. Boil chicken for 15 minutes - drain and chop. Slice tomatoes and drain on paper toweling.
  • Place chicken in pie crust. Spread with pesto sauce. Layer tomatoes evenly on top of pesto. Sprinkle with flour and pepper. Spread mayo evenly over tomatoes. Sprinkle with shredded cheese.
  • Bake at 400 degrees F for 20 minutes.

Notes

I have always liked tomato pie. Adding the chicken and other ingredients makes the pie either a lunch or dinner favorite. It's lovely served with a mixed green salad.
