  • Marinate chicken in salad dressing for 8 hours or overnight, in resealable plastic bag. Preheat oven to 375 degrees F. Place cornflake crumbs, salt and pepper in resealable bag; add chicken pieces. Shake well to coat.
  • Place on baking sheet lined with foil. (Spray with nonstick spray or use Reynolds Release brand foil.)
  • Bake for 30 - 45 minutes or until crispy on the outside or internal temperature reaches 180 degrees F.

Notes

This is a kid pleaser for potlucks, so try preparing it using all drumsticks or thighs. It goes especially well with potato salad and some crispy Italian bread.

    Believe it or not, it completely fooled my husband! He thought that he was eating his Mother's 'Old Fashioned Fried Chicken'!!! Anything to get him to eat healthier!!! & I still haven't told him otherwise!!!!!!!!
