  • In medium bowl, combine ground beef, parmesan cheese and Italian seasoning. Shape mixture into four patties.
  • Heat oil in large skillet over medium high heat until hot. Add bell pepper rings. Cook 2 to 3 minutes or until crisp tender. Remove from skillet.
  • Place patties in same skillet. Reduce heat to medium and cook 5 to 6 minutes on each side or until no longer pink in the center. Top each patty with 2 bell pepper rings and 1 slice of the mozzarella cheese. Cover, cook 1 to 2 minutes or until cheese is melted. Serve in buns.


My personal favorite is red or orange bell pepper, which can be substituted without issue. A great serving suggestion is oven-roasted potatoes and crisp veggie sticks drizzled in ranch dressing (regular or low fat).
