  • Place potatoes, celery, and carrots in large pot, barely cover with water. Bring to a boil, then reduce to simmer, stirring occasionally, until potatoes are barely tender. Remove from heat, pour off 2/3 of water, and set aside.
  • In large skillet cook sausage, onion, and garlic, over medium heat until sausage is done. Add enough flour to make a good gravy, stirring into sausage mixture thoroughly. Add half and half slowly, stirring constantly until completely mixed. Save any remaining half-and-half. Set aside.
  • Return potatoes to stove, with heat turned on low. Add chicken broth and meat mixture, stir. Add remaining half-and-half, stirring again. Heat for five minutes then add remaining ingredients, stirring occasionally. Cook for 20 minutes. Do not allow soup to boil.


This is a very rich and hearty soup that is a family favorite. I generally serve it with a fresh fruit salad and good, crusty, bread.
