  • Using electric skillet or large frying pan with lid, brown chicken with skin on (can be removed after cooking to reduce calories) in olive oil (enough to cover bottom of pan). Remove chicken after browned on both sides.
  • Add potatoes to pan in a layer and salt and pepper lightly. Cover potatoes with half of tomatoes, and then sprinkle with Italian seasoning and garlic salt. Return chicken to pan placing evenly over potatoes and tomatoes. Add remaining tomatoes over top of chicken and once again sprinkle with Italian seasoning and garlic salt.
  • Cook for 30 to 45 minutes or until chicken is no longer pink and potatoes are soft. If using electric skillet cook at 350 degrees F and vent, if stovetop preparation cook over medium heat and cover with lid slightly askew to allow steam to escape.

Notes

Delicious with Italian bread and large salad.

My mother in law makes a great recipe however when I try to follow her recipe it never taste as good and ny family doesn't like it. When my 13 year old found out we were having meatloaf she said "ew you know I hate meatloaf" I told her it was from Kraft so she tried and ate her whole serving saying "but I like this meatloaf. We all liked it and I will definately make it again. Kimberleigh

I make a similar meat loaf using my favorite recipie BUT I put it in a pie pan, using pizza cheese and ham. When it is done baking I top it with cheesy/garlic mashed potatoes topped with grated cheddar and put it back in the oven to melt and slightly brown the cheese. Looks great and tastes wonderful for a one pan meal. Guests love it!!

Rated 5 out of 5 by from I made this recipe twice now and both times there were no leftovers! I made this recipe twice now and both times there were no leftovers! Taste is excellent and beats a standard meatloaf hands down. I used Black Forest Turkey Ham and Reduced Fat Ritz crackers and the kids did not even know. Also I used Kraft's Thick n Spicy brown sugar sauce instead of the original.
