Skippy is my Mom and this is a dish I remember from my childhood. It's wonderful with creamed potatos and peas.
I really enjoyed this recipe. The pork came out so tender, and the flavor was delicious. I sprinkled a little onion powder on the pork chops in addition to the salt and pepper before I broiled them. Then in the diced tomato mixture, I used Italian seasoning, 2 minced garlic cloves, and salt & pepper. With about ten minutes left of baking, I took off the foil, and sprinkled some mozz. cheese on top. Yum!!!
