  • Place the rice in bottom of a 3 quart casserole dish that has been sprayed with cooking spray.
  • Layer zucchini, tomatoes, onion rings, sprinkle with seasonings to taste. Repeat layers about 3 times, depending on depth of casserole. Top with the cheese. Place raw bacon on top, with slices slightly overlapping.
  • Bake at 350°F for about 1-1/2 hours, depending on thickness, or until veggies are tender and bacon is done to your liking.


This is best when you have very fresh zucchini and tomatoes in summer. Everyone I have served this to has asked for the recipe. My family eats it as a main dish with crusty bread.
