  • Boil pasta per package directions. Meanwhile, peel avocados and cucumbers. Then cut avocados, cucumbers, and tomatoes into large bite-size chunks. I usually cut the olives in half, also.
  • When pasta is ready, drain and run under cold water immediately until noodles are cool to touch.
  • In a large bowl, combine the noodles and pesto and mix until all the noodles are well coated. Add all remaining ingredients and then salt to taste.

Notes

You can eat this immediately, or refrigerate and serve once chilled more completely. Either way, it's a hit.
