  • In mixer (or chopper) combine 1/2 of the cream cheese and 1/2 of the vegetables until creamed. Cut Velveeta log in 1/2 by width.
  • Cover counter with waxed paper and place 1 of the Velveeta 1/2's on waxed paper cover with a sheet of waxed paper. Roll cheese into 1/2" thickness (as to create a flat surface) - you will have to lift and rotate waxed paper so it doesn't tear.
  • Remove top piece of waxed paper and spread cream cheese mixture onto cheese (covering entire surface). Once covered, roll cheese into a "LOG". Repeat with remaining ingredients. Use waxed paper to cover "LOG" in refrigerator or serve right away.


Cut the ends of the "LOG" off for a prettier presentation. Best served with bacon crackers or club style crackers. (The ends make a great midnight snack) These can be frozen and thawed 1 hour before serving-or until middle is no longer solid. ***Alternative*** Don't cut Velveeta in 1/2 and roll out as normal and spread cream cheese mixture in the middle. This will serve a long "LOG".
